Course profile This course provides a thorough understanding of the hotel and catering environment including the technical aspects of accommodation provision, production and service of food and drink. A variety of units is offered for students wishing to focus on technical operations. Attention is also drawn to the external influences shaping the management of hotel and catering business. Individual social and economic factors are explored in a range of units from Hotel and catering Law to Social and Organisational Behaviour. A new route through the degree enables students to specialise in the operation, management and marketing of tourism. |

A wide variety of assessment methods are used, including examination papers, group work presentations, case studies, and coursework. Assessment generally takes place at the end of each semester. |
